Changes in 2014
As previously communicated during the application process, moving to The Salon Culinaire prompted us to make some changes to the rules
New time allowance - The competition is only 1hr 45mins long. Finalists will be penalised for over-running.
Mis-en-place allowance changed - See the rules for allowable preparation.
Only 2 plates required to be presented (not 4 as previous years)
Competitors to supply all raws.
Finalists will be contacted by the APC regarding product samples once letters have been sent out by the Salon organisers.
Competitors must use an item from each sponsor
How did you do the paper judging?
All entries are evaluated completely blind - we only see the description and image of each dessert. AT NO POINT do the judging committee see the applicant’s names until all finalists have been chosen.
Judging was undertaken on 25th February 2014
The judging was carried out by The APC Executive Committee and independently moderated by a representative of The Salon Culinaire organisers.
The Salon organisers collated all entries and made copies of each entry that were stripped of all identifiable information. Applications were identified by a 3 digit unique reference number assigned by The Salon organisers.
The APC Committee undertook blind judging based on
Combination of flavours and textures
Variety of skills shown
Quality of execution and Visual appeal
Note taking and scoring was undertaken by The Salon representative
The 10 highest scoring desserts were then selected for the final
Only after verifying the chosen finalists, were the identities of all applicants revealed by The Salon representative.
Feedback for candidates has been made available where requested.
